Simple Lemon Vinaigrette

This lemon vinaigrette has been our go-to homemade dressing, and works oh so well with nearly any salad combination. It’s great for citrus lovers, and combines a perfect balance of sweet, tang, and salt to enhance a garden salad.

We love that it’s quick to assemble, and easy to modify the quantity (by maintaining the ratio), whether we are making a weeknight salad for two, or hosting a dinner party.

This dressing is made for citrus lovers, and combines a perfect balance of sweet, tang, and salt to enhance any garden salad.

Ingredients

  • 1 large lemon

  • 2 tsp dijon mustard

  • 1 tbsp honey

  • 4 tbsp extra virgin olive oil (or another oil of your choice)

  • Salt and pepper to taste

Directions

  • Zest the lemon into a small bowl.
  • Cut the lemon into half and squeeze the juice into the bowl.
  • Add honey and dijon mustard into the bowl. Using a small whisk or a fork mix well.
  • While mixing, slowly add the olive oil until incorporated.
  • Add a crack of fresh ground pepper and kosher salt. Taste and adjust as needed.
