Pancakes are one of our favourite treats on a lazy Sunday morning. Next time your craving strikes, try these out for a healthier choice. These fluffy buckwheat pancakes are gluten-free and contain no added sugar — giving you the perfect excuse to layer on your favourite syrup and toppings!

These fluffy buckwheat pancakes are gluten-free and contain no added sugar — giving you the perfect excuse to layer on your favourite syrup and toppings!

Ingredients

  • Pancake Batter
  • 1 cup + 2 tbps buckwheat flour

  • 1 ripe banana

  • 1 cup almond milk

  • 1 tbps coconut oil (plus more for skillet)

  • 1 tsp of baking powder

  • 1 tsp of cinnamon (or more to taste)

  • 1 tsp vanilla

  • 1/8 tsp salt (or more to taste)

  • 3 tbps of almond butter (optional)

  • 2 tbps chia seeds (optional)

  • Suggested Toppings
  • Toasted pecans or walnuts

  • Berries

  • Coconut flakes

  • Maple syrup

Directions

  • Start by mashing your ripe banana with a fork.
  • In a liquid measuring cup, mix almond milk, coconut oil, and vanilla. Mix your wet ingredients with the mashed banana.
  • In a medium sized mixing bowl, combine the dry ingredients (buckwheat, baking powder, cinnamon and salt).
  • Pour the liquid into the dry ingredients and mix well with a whisk.
  • Add almond butter and chia seeds.
  • Be careful not to over mix. Aim for a batter that is slightly thick.
  • Heat up a large skillet on medium heat and lightly grease pan with some coconut oil.
  • Pour 1/2 a cup of batter per pancake. Cook for 1-2mins per side until golden brown.
  • Top with your favourite fruits, toasted nuts, and maple syrup.

Notes

  • If your coconut oil has solidified at room temperature, give it a quick zap in the microwave so that it liquifies. Continue stirring as your mix the oil into the rest of your liquid ingredients.
